Going 'Bananas' for a Muffin?!




Going bananas for a muffin?... why not bake banana muffins?!

I love this recipe and even though it might take a bit longer to prep, it is still easy to do and honestly the best way to indulge your banana cravings.

This is what you will be needing:

Ingredients
  • 1 cup of sugar
  • 8 tbs or 1 stick of unsalted butter
  • 2 large eggs
  • 3 ripe bananas 
  • 2 tbs milk
  • 1 tbs cinnamon
  • 2 cups of All-purpose flour
  • 1 tsp baking powder 
  • 1 tsp baking soda
  • 1 tsp salt
Optional
  • 1 cup of pecans 
  • 1 cup of chocolate chips

Preheat your oven to 325 degrees F.
Start by mixing together the sugar and the butter in a bowl until it gets light and fluffy. Add eggs one by one and mix well.

In a small bowl mash the bananas with a fork. Mix in the milk and the cinnamon. If you love cinnamon as much as I do go ahead and add a bit more than 1 tbs.

In another bowl, mix in together the dry ingredients: flour, baking powder, baking soda and salt.

Then, add the banana mixture to the 'butter, sugar and eggs' mixture until it is all combined.  Add dry ingredients  slowly and mix well until all the flower slowly disappears. If you want to add pecans to your banana muffins go ahead and add them now to the mixture.  As for the chocolate chips, I prefer to place them on top of the batter before placing them in the oven, but feel free to do as you prefer.

Grab your muffin pan and place paper liners. Pour the batter in each liner. Sprinkle some more pecans and chocolate chips if you want. Place the pan in the oven for about 20 - 18 minutes or until golden brown (test it by inserting a toothpick in the center, if it comes out clean they are done!)

Once they are out of the oven, enjoy them with some ice cream by the side or add some of your favorite icing for a great cupcake.
