Nutella Cinnamon Oatmeal Cookies


So now that finals are over, I have had more time to enjoy doing the other thing I enjoy. Yes, you guessed right, cooking it is :) Lately, I have been craving for Nutella. So to say the least I decided to bake Nutella cookies but with a twist. I wanted to add two other ingredients that I enjoy in my baked goods: oatmeal and cinnamon.

So this is what you will need:

Ingredients

1 1/3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2  teaspoon cinnamon
1/4 cup oatmeal
1/2 cup butter, softened
1/2 cup Nutella
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract

*If you are a big fan of chocolate you might want to add:
2/4 cup chocolate chips

This recipe makes about 30 cookies.

Instructions

1. In a small bowl combine the flour, baking powder, baking soda, salt, cinnamon and oatmeal. Set aside.
2. In a medium bowl combine the butter, Nutella, sugar, and brown sugar. Using an electric mixer (or by hand with a whisk), mix the ingredients together.  Add the egg and vanilla and beat until all ingredients are well integrated. Following, stir in the dry ingredients little by little until everything is combined. * Add the chocolate chips and stir.

3. Refrigerate dough for at least 30 minutes, for better results let it cool for 1 hour. I find that by doing this the cookies have a crispy texture to them as well as more flavor.

4. While you wait for the dough to cool, preheat the oven to 375 degrees F.

5. Using a 2 tablespoons spoon out the cookie dough onto a cookie sheet or tray (you can place aluminum foil on top if the tray is not a non-stick one). Space each portion about 3 inches apart. Bake until golden for about 10 to 13 minutes.

6. If you are impatient as I am, be careful when transferring the cookies and be sure to use a wide spatula to transfer the cookies to a cooking rack.

7. Let the cookies cool for about 15 minutes.
